Not all Champenois wine is sparkling. Coteaux Champenois is actually an appelation for still wines producing in the region. They are rare, as making them means less fizzy, where the big money comes from. That didn’t stop the Collard Picards, to show us not only a beautiful still wine, but a wine produced entirely out of the undervalued Pinot Meunier. Only 1733 bottles were ever produced, so get your hands on some before it’s too late.
