The creation of M has been the work of founder Martin Williams. His twenty year culinary odyssey through some of the world’s most interesting and innovative bars, restaurants, and hotels has provided the global inspiration for the M experience – our gastro playgroundThe food we select is ethically sourced for purity and quality from around the world, and is cooked using a range of international cooking techniques that elevate each ingredient to its best possible expression. It is this unique combination of technology, technique, and source that creates the modern international grill


Our Dishes

We focus on using traditional techniques but in a modern way. Coal creates a searing heat

to brown a meat, fish or vegetable surface. Wood adds its own unique mystical character and depth of flavour. In contrast Ice is used to help bind a cream with fruit, crisp a salad leaf, or to cure a delicate piece of seafood
